6th International Grand Chapitre of Chaîne des Rotisseurs Russian Bailliage

       

   



   


November 03, 2007 – The new members induction ceremony with the following gala dinner took place in the opulent Marble Palace of St. Petersburg in conclusion of the 6th International Grand Chapitre of Chaine des Rotisseurs.


On November 1-4, 2007 the Russian Chapter of Chaine des Rotisseurs held the annual international meeting of its members, the Grand Chapitre. This year Chaine members representing 7 countries from the USA to Australia visited St. Petersburg.

       

23 new members joined the Russian Chapter of Chaine this year. Among them were professional members (hoteliers, restaurateurs, chefs) along with non-professionals, haute cuisine devotees. Mr. Jaakko Nuutila performed the induction ceremony.

       

The theme of the Grand Chapitre this year was “Peter the Great: from Tzar to Emperor”. The Executive Committee of Chaine decided to refer to Russian history and to one of the brightest personalities Peter Romanov (Peter the Great). He became the first Russian Emperor having been inducted on November 02, 1721. In commemoration of this event Russian Chapter of Chaine des Rotisseurs held its 6th International Grand Chapitre.

       

The Executive Chefs of four best St. Petersburg hotels (Corinthia Nevskiy Palace Hotel, Grand Hotel Europe, Radisson SAS Royal Hotel and Renaissance Baltic Hotel) submitted the Russian fine cuisine six course menu. It included Smoked eel and crayfish parfait served on potato dranik topped with pickled beetroot, Kournik filled with slightly smoked wild duck breast and marinated apple, Roasted beef fillet with Novgorod chanterelles and chestnuts, Cranberry & Raspberry Parfait and other forgotten dishes of original Russian cuisine. The entertainment program met the culinary one and represented the scenes of Peter the Great’s lifetime.

       

“The difference between the gastronomic dinner and the usual one is that the food, wines and service are the highlight of the evening and should be even brighter then the entertainment. Today the brigade of 95 waiters serves 110 guests. Moreover, the service team rehearsed on the eve of the event” says Thomas Noll, the Bailli Delegue of Chaine des Rotisseurs, Russia.


On November 1, Bailliage de Russie striving for developing of gastronomic values held the seminar on Organic Food for professional members (chefs and restaurateurs). The seminar was conducted by Mr. Jaakko Nuutila who gave a course on culinary management and leadership and lesson about organic food chain and production.

       

Especially for international guests of the Grand Chapitre the program included visits to opulent palaces, museums and theaters of St. Petersburg along with lunches and dinners in Chaine des Rotisseurs restaurants.

       

Every national chapter of Chaine holds Grand Chapitres at least once a year thus uniting its members all over the world and giving them the opportunity to communicate, discuss culinary news and to enjoy the new gastronomic delights from the best chefs.


Chaîne des Rôtisseurs is an international gastronomic society founded in France in 1248 and reborn in 1950. The Chaîne is originally based on the traditions and practices of the old French royal guild of goose roasters. Since its rebirth the society has grown dramatically, spreading its influence and presence worldwide.


Today, Chaîne brings together professional (such as chefs, restaurant and hotel owners and managers) and non-professional members who share in the "spirit" of the Society and who appreciate and enjoy wine and fine dining. This association of people now devotes itself to promoting and developing the gastronomic values whilst at the same time widening its focus to ‘table art’. Bailliage de Russie of Chaine des Rotisseurs was launched in 2002 by Thomas Noll.
